Paprika Chicken

Paprika Chicken.

Paprika chicken is an ideal one pan dish and is simple to make and will satisfy a hungry family or group of friends.
You could mix the paprika and spice oil fresh but this recipe is about cooking in a motorhome or outside of one so here I use a flavour pot produced by Shwartz. One of the great things about this dish is the flexibility to tailor the dish to suit personal preferences or dislikes.
Ingredients:
4 chicken thighs (two thighs per person) or two chicken breasts cut into chunks.
1 Shwartz flavour pot
2 banana shallot (chopped finely) or large white or red onion
1 400g tin chopped tomatoes
1 200g tin new potatoes
1 200g tin of chick peas
1 200g tin of sweet corn
garden peas frozen or fresh from the pod if you can find them.

To start place a little oil in the paella pan and add the chopped shallot and cook until starting to soften, next add the chicken and the oils and spices from the flavour pot and continue to cook through stirring until the spice mix covers all of the onion and chicken, when the chicken starts to colour add the chopped tomatoes, the chick peas, sweet corn, peas and the potatoes add a little of the water from the chick peas or potatoes and continue to cook covered for about twenty minutes or until the chicken is cooked through, if the mixture is too runny cook uncovered for a little longer to reduce the fluids.

Serve with rice or mashed potatoes or just enjoy in a bowl with some rustic bread.
